SPAGHETTI SQUASH & TURKEY MEAT SAUCE RECIPE

When I was little, my mom always made a meat sauce for dinner at least once a week. That is probably why I’m such a big fan of the dish to this day and make it on the regular! Usually, I would pair the meat sauce with a pasta of some sort, but when the cooler temps hit, I love incorporating seasonal squash into my dinner recipes. Of course, you can still use pasta if you aren’t a fan of this particular veggie. It will not take away from this dish and that is the best part about it! Not only is it super customizable, but it’s so simple too!

*”Pasta” Ingredients*

  • Spaghetti Squash

  • Cooking Spray 

*Meat Sauce Ingredients*

  • Ground Turkey

  • Half an Onion 

  • Half of a Yellow Pepper * (Usually, I use mushrooms, but this is the veggie I had on hand. You really can use whichever veggies you like 😊)

  • Tomato Sauce 

  • Garlic Powder

  • Onion Powder

  • Salt

  • Pepper

  • Brown Sugar *Optional

Spaghetti Squash Cooking Instructions

1. Preheat the oven to 400 degrees.

2. While the oven preheats, cut the spaghetti squash in half lengthwise, meaning from stem to butt. Scoop out the insides* and place the 2 cleaned out halves on a lightly greased baking sheet face down. * I find that using a grapefruit spoon for this works wonders. 

3. Place the spaghetti squash into the oven for 30-40 minutes, or until lightly browned along the edges. You want it to be fork tender, but a tad firm. Cook times may vary depending on your oven and the size of the spaghetti squash itself. 

4. Once cooked to your liking, take the spaghetti squash out of the oven, flip so the cut side is facing up and let cool.

5. Once cooled, use a fork to scrape out the insides.

Meat Sauce Cooking Instructions

1. While the spaghetti squash is roasting, set your pan on medium heat and start sautéing your onions. We like ours super caramelized so we let them sit until they have a nice brown coating on them. Halfway through the browning, add in your veggie of choice and stir until it begins to soften.

2. Once the veggies have begun to soften, add in your ground turkey and cook until browned. Make sure to stir this often so that it can cook evenly.

3. Once the meat has been browned, add in your tomato sauce and stir until everything is well combined. 

4. Add in your onion powder, garlic powder, salt, pepper, and brown sugar (optional) to your liking. Stir altogether and let simmer for a few minutes. 

5. Add your spaghetti squash to your bowl, top with meat sauce, and enjoy!
